The Davíd & The Chérie

The Davíd sandwich is a celebration of brie! And baguettes! (And maybe french fries!) It goes like this:

1 baguette

2 olive oil = fatty

3 ketchup (homemade will have more exciting flavors) = sweet

4 brie & parmesan (remember that there is no such thing as too much parmesan) = substantial

5 toast this in the oven

6 pickled red onions = acidic & crunchy

7 (optionally) french fries

The Chérie may be the best sandwich I’ve invented. And I didn’t really have Dad in mind, but rather my two grandmothers, one of whom is Chinese and the other married an Italian and became a baker of fabulous breads like baguettes with chocolate inside! 

So, start with some sort of Italian bread (my local baker kindly made a baguette with chocolate inside specially for me). 

Next you will drizzle on olive oil (because remember what Chef Tyler Kord says about sandwiches! If you don’t know, go read his book!). 

Then toast the bread. 

Smear on some Italian chocolate hazelnut spread (i.e. Nutella)

Lastly, add these 3 fillings: 

1 bacon

2 crispified tofu (like maybe pressed tofu, tossed in some sort of starch & soy sauce and then baked, or whatever way you like to make your tofu)

3 pickled cherries (this is not super hard if you start with frozen, pitted cherries - actually just see what I did below*)

Voila!

*Pickled Cherries:

1 pound cherries

3/4 C cider vinegar

1/4 C sugar (granulated monk fruit)

2 t whole peppercorns

1 t whole coriander seed

1/2 t crushed red pepper

1 sprig rosemary

heat everything excepting the cherries (and rosemary) in a sauce pan on medium/high to dissolve sugar (bring it to a boil), then reduce and simmer 5 minutes

strain out the solids, return liquid to pan with cherries, add the rosemary, and simmer (3-5 minutes)

put cherries and rosemary in a 1 quart mason jar (or smaller jars, dividing the sprig), cover with pickling liquid, cool & cover & chill
