The sandwich is all about pesto and bagels! 

Here’s what you need:

• a bagel

• cream cheese

• pesto (make it yourself from: arugula/kale/spinach/basil, garlic, parmesan/nutritional yeast, nuts, evoo/coconut oil, water, salt & pepper, red pepper flakes)

•8dried or fresh figs

•8walnuts

• pickled red onions (these are easy-peasy: large sliced onions and a cup or so of white vinegar and teaspoon or more of salt all shaken up and ‘fridged)

You can try making this sandwich with persimmons, too, or even dried pears.
