Biscuits & Mashed Potatoes

Dad’s specialties are things involving gravy: mashed potatoes (which we just as often had for dinner merely with butter), biscuits, and waffles, to be precise. His most spectacular gravy is carrot gravy. You will want to try this: make a white roux however you see fit (essentially this is butter, flour, and liquid, maybe milk or cream, and cooked long enough to thicken, but not get brown), meanwhile steam a couple carrots and an onion until they’re super soft, and finally put all of it (with salt & pepper) in a blender or food processor and blend it up!
