Dad takes his spelt seriously. For as long as I can recall, he has staunchly baked most everything with spelt, despite the raised eyebrows of certain bakers in our family. But, he will deign from time to time to use regular white flour, like for these biscuits (which, please note, he does usually bake with spelt).
