This is the first of several sandwiches I have created and named for my dad. Fortunately, he super likes it! I know that you will like it, too, so here’s the order of ingredients:

  1. Croissant

  2. Mayo mixed with chipotle hot sauce spread on both sides

  3. Chicken (cold, fried, whatever) on the bottom half

  4. Avocado slices on the top half

  5. Pickled red onions on top of the chicken

  6. Dates on top of that

Don’t let the pickled red onions prevent you from making this. They are too easy: 

  • sliced onions (they don’t have to be red), like 2 big ones

  • enough vinegar (any kind and even lime juice), maybe a cup

  • salt, about a teaspoon

  • shake it all up (in a sealed container) and fridge it, or boil the vinegar with a bit of water and the salt for a quicker pickle

Chef Tyler Kord outlines the principles of sandwich artistry in his outstandingly Super Upsetting Cookbook About Sandwiches. That is what inspired me to start thinking up sandwiches. Maybe you should be thinking more about sandwiches, too! Consider that an exceptional sandwich should somehow incorporate each of the following elements: salty, fatty, sweet, crunchy, and acidic.
